Salmon rubbed with Mediterranean Bliss

I love salmon and three of my rubs are delicious on Salmon. My favorite is our Mediterranean flavored rub - recently renamed Mediterranean Bliss. You can either poach it, smoke it, grill it or bake it. We're going to bake or grill it today.

If you're using an oven preheat it to 450 degrees on roast or bake. If you're using your grill put it on high and close the lid for 15 minutes to let it get good and hot. Before putting your salmon on the grill - oil them using a paper towel with oil on it and your long tongs.

Place salmon, skin side down, on a broiler pan or cookie sheet covered with aluminum foil.  I also put a thin layer of butter or oil on the foil to keep the salmon from sticking.

For 1 lb of salmon I use about 1 tablespoon Mediterranean Bliss. Sprinkle the rub on the salmon and place in the oven for about 10-12 minutes depending on the thickness of your salmon filet or steak. I like to under-cook it as there is nothing worse than dried out fish.

When the 10 minutes is up, put the salmon on a rack about 1.5" to 2" from the broiler - switch it to broiler mode and leave it in from 1-3 minutes - just enough to let it brown. Keep a close eye on it as it cooks. When it looks a little browned bring it out and you have a delicious piece of fish!

If using your gill, once you've oiled it place the seasoned salmon on the grill and cook for about 10 - 15 minutes depending on the size of your salmon. Close the lid for a portion of the time to get it cooked through. It will come out browned on top and moist on the inside! Yum!!
